Co-owners Candice Penrose, Charles Rosenthal and Daniel Rosenthal haven’t set a date for their mobile gourmet waffle truck to hit Columbia streets, but Penrose says they are aiming for early January. Details about hours, routes, menu specials and a generator installation are holding their business at a standstill.
When The Sunflower Waffle Company “opens,” the menu will appropriately reflect a relaxed, earthy ambiance. Using local ingredients, Penrose and Rosenthal will prepare the organic waffle batter – a combination of Rosenthal’s recipe and Penrose’s grandmother’s recipe – in the truck as blues and bluegrass music plays on the sound system. Breakfast, brunch, lunch and dessert waffles will be served, including waffle corndogs, waffles with ice cream and a Southern favorite, chicken and waffles. Prices for each entrée will not exceed $10. The Sunflower Waffle Company will also serve a Sunflower Waffle Blend of pour-over coffee, in addition to homemade lemonade and iced tea.
The truck itself is a visionary meal. Penrose and the Rosenthals chose a sunflower field skyline design to wrap around the truck, which, Penrose says, will serve as a method of advertising.
“It’s going to be hard to miss,” Penrose says.
