Country Fried Steak

Recipe from Trey Quinlan, executive chef at Bleu Restaurant and Wine Bar

November 16, 2009 | 12:00 a.m. CST

First pound out sirloin cuts of beef and poke them with a knife.
Then bread the cuts using flour seasoned with salt and pepper and any other spices you might enjoy, such as cayenne pepper.
Pan-fry them in a cast iron (not a nonstick) skillet to get a better flavor, until they are golden brown.
A simple gravy of roux (a cooked mixture of flour and fat), butter, milk, salt, pepper, granulated garlic and cayenne pepper can accompany the meat.
