44 Stone Public House serves Brit-style fare

Craft beers meet great food

There’s no need for bland bar food and greasy fried (fill in the blank) to go with that beer. New restaurant 44 Stone Public House has a better option: contemporary American cuisine with a British flare and a variety of brews that beer lovers will appreciate.

In the wake of the wine-bar craze, the concept of combining craft beers with great food is starting to become popular in the U.S., says Dave Faron, co-owner and co-chef of 44 Stone Public House. Opening a restaurant with this concept was an exciting possibility for Faron and his business partner, Mark Sulltrop, both of whom were formerly chefs at Bleu. “I don’t think British food is considered boring anymore like it was 20 years ago,” Faron says.

Not shy about their love for food and beer, Faron and Sulltrop chose a self-deprecating moniker. “Mark and I combined our weight in stones,” a unit of measurement equal to 14 pounds, Faron says. He jokes that “fat guys’ pizza pies” was another option.

The restaurant’s style and décor are designed to accommodate a range of diners. One side is suitable to contemporary dining, and the other, deemed the Pub Room, features dartboards, a foosball table and the exposed kitchen.

The pub will serve approximately 50 beers, including regional brews Cathedral Square Belgium White Ale, Tin Mill Midnight Whistle, O’Fallon and Boulevard. The menu will include traditional British dishes, such as bangers and mash, and American classics such as the chefs’ favorite item: a good, quality burger. “A burger is a good gauge of how good a restaurant is,” Faron says. “If they put care into that burger, they probably put care into everything else.”

Sycamore co-owner and chef Mike Odette looks forward to the duo bringing a new restaurant to the local dining scene. “I hope they have a lot of fun with it,” Odette says. “Knowing them, I think they will.”
